STEVE’S CLAM SPREAD

2 cans minced clams (drain off juice, reserving ½ can to add to mixture)
1 medium onion diced
16-18 Ritz Crackers (crushed)
2 Tbl. Fresh minced parsley
4-6 garlic cloves crushed thru a garlic press (more if you like)
1 Tbl. Olive oil
1 Tbl. Butter
juice from 1 wedge of lemon
salt & pepper to taste

Saute onions in olive oil until transparent and slightly browned around edges
While onions are cooking…Mix all of the other ingredients (except the butter) together in a bowl.
As onions are finishing add the butter into the pan and melt then throw all of that into the bowl with other ingredients.
Mix all together and adjust the salt and pepper ( the garlic may be somewhat strong but it will calm down.)
Put into casserole dish Bake in oven at 350* for 25-30 min.
It should be bubbling around the edges
Great on French bread baguettes or rye cocktail rounds.
